Is your pizza thin or thick crust?
Neither! While it’s thin in the middle, the outside crust puffs up in the oven and becomes a deliciously crisp texture on the outside, with a soft and airy inside. It’s closest in style to a Neapolitan style pizza, with hints of a New York Slice. All our dough is made at least 24 hours before baking, and allowed to slowly rise, creating more flavor and that perfect crunch and chew.
What is Neapolitan Pizza?
Traditionally it was a risen dough, uncooked sauce, and fresh mozzarella pizza cooked in an oven at 800-1,000 degrees F to create a crispy yet chewy crust & soft middle. While our pizza is inspired by this style, we’ve made a few small changes. We sourced a more flavorful Mozzarella Cheese from Wisconsin, and make a slightly less wet, thinner crust.
How do I order?
Walk out to the trailer to place your order. After you order, we will give you a buzzer and will buzz you when your order is ready for pick-up.
What size pizzas do you offer?
Our pizzas are approx. 12 inches in diameter. We hand stretch every dough as opposed to using mechanical methods of forming the dough, which makes every pie unique in shape, and slightly variable in diameter.
Does your oven run on wood?
We’ve experimented with both wood and gas, but our ovens run on propane. When it only takes just a bit more than a minute to bake, the wood-fired flavor doesn’t have time to make it’s mark. The gas burner creates consistent temperatures within the oven, allowing us to cook each pizza evenly.
How long does it take to bake each pizza?
Each pizza takes about 90 seconds to bake. But, it takes longer to spread and top the dough before baking. Depending on order volume, it should take less than 15 minutes to get your pizza!
Where do you get your ingredients?
The flour, salt, olive oil, and tomatoes are all imported from Italy. The cheeses and pepperoni are sourced from Wisconsin. The Italian Sausage is from Twin Oak Meats in Fairbury, IL. The vegetables are locally sourced when in season.
Do you serve anything besides pizza?
We occasionally feature other types of cuisine, as well as guest chefs making their own specialties. Please refer to our Calendar for details on each day’s food service.
Is there a chance you’ll run out of pizza before I get there?
Please check our social media to see if we still have dough for the day. Our dough is made and individually balled fresh by hand, and must rest for at least 24 hours before being baked. As a result, we are unable to make more to meet irregularly high demand on a specific day. Once it’s gone for the day, it’s gone. Thank you for understanding!
Can I call in and order a pizza?
All orders must be placed at our Trailer Window. We have limited staff in the trailer, and are unable to accommodate phone service.
How do I reheat my pizza?
There’s three ways to do it, if you don’t have a 900* oven at home - air fryer is best, pizza pizzazz is second, and third, you can set your oven on the highest temperature it can go, preheat a stone or baking sheet in the oven, and when it’s ripping hot, toss your pizza in for just a few minutes.
